24 thin slices bresaola*
1/2 bunch arugula, trimmed and rinsed
As required parmesan cheese, shaved
As required virgin olive oil**
1 lemon in wedges
Arrange the slices of bresaola in a fan shape on four plates.
Place some arugula in the centre of each plate.
Top with cheese shavings.
Serve with a drizzle of olive oil and the lemon wedges.
* This delicious dried, cured beef is a specialty of Northern Italy.
**You can also use one of the lemon-scented olive oils now available. Because the bresaola is already salty and flavourful, salt and pepper are not necessary.
