Ingredients

1 medium onion, finely chopped
450 g (1 lb / 8 stalks) celery, cleaned, peeled and cut in 2,5 cm (1in) pieces
90 g (3 oz) pancetta, thinly sliced, in julienne strips
45 ml (3 tbsp) olive oil
1 can, 284 ml (10 oz) chicken stock, undiluted
250 ml (1 cup) canned, diced Italian plum tomatoes
Salt and freshly ground pepper, to taste

 

Directions

  1. In a saucepan, wilt the onion, celery and pancetta in the oil. Add the stock and tomatoes. Cover and simmer for 10 minutes, or until the celery is tender.
  2. Remove the cover and reduce over high heat until the liquid has almost completely evaporated.
  3. Season to taste and serve.
