1 medium onion, finely chopped
450 g (1 lb / 8 stalks) celery, cleaned, peeled and cut in 2,5 cm (1in) pieces
90 g (3 oz) pancetta, thinly sliced, in julienne strips
45 ml (3 tbsp) olive oil
1 can, 284 ml (10 oz) chicken stock, undiluted
250 ml (1 cup) canned, diced Italian plum tomatoes
Salt and freshly ground pepper, to taste
- In a saucepan, wilt the onion, celery and pancetta in the oil. Add the stock and tomatoes. Cover and simmer for 10 minutes, or until the celery is tender.
- Remove the cover and reduce over high heat until the liquid has almost completely evaporated.
- Season to taste and serve.
