Bowties with Artichoke Hearts

2 cloves garlic, chopped
10 ml (2 tsp) dried oregano
60 ml (4 tbsp) olive oil
1 can (398 ml / 14 oz) artichoke hearts, drained, patted dry and quartered
1 can (798 ml / 28 oz) tomatoes, diced
Salt and freshly ground pepper, to taste
450 g (1 lb) bowtie pasta
225 g (1/2 lb) bocconcini cheese, diced
- In a large saucepan, sauté the garlic and oregano in oil for 30 seconds over medium heat.
- Add the artichoke hearts and tomatoes, season and simmer for 15 minutes.
- While sauce is simmering, cook bowties al dente, according to package instructions. Drain and add to the sauce.
- Add the cheese, mix well and serve.
- Serve immediately.
