Bowties with Artichoke Hearts

Ingredients

2 cloves garlic, chopped
10 ml (2 tsp) dried oregano
60 ml (4 tbsp) olive oil
1 can (398 ml / 14 oz) artichoke hearts, drained, patted dry and quartered
1 can (798 ml / 28 oz) tomatoes, diced
Salt and freshly ground pepper, to taste
450 g (1 lb) bowtie pasta
225 g (1/2 lb) bocconcini cheese, diced

 

Directions

  1. In a large saucepan, sauté the garlic and oregano in oil for 30 seconds over medium heat.
  2. Add the artichoke hearts and tomatoes, season and simmer for 15 minutes.
  3. While sauce is simmering, cook bowties al dente, according to package instructions. Drain and add to the sauce.
  4. Add the cheese, mix well and serve.
  5. Serve immediately.
