Cut tomatoes in half horizontally and place on a baking sheet. Season with salt and pepper and place in a hot oven for a few minutes. Remove from oven and top each half with a slice of cheese. Sprinkle with breadcrumbs and chopped parsley. Return to the oven just long enough to melt the cheese and brown the crumbs. Serve hot or warm, drizzled with olive oil.
