12 small potatoes, unpeeled
12 good-sized bay leaves
75 ml / 1/3 cup olive oil
To taste fleur de sel
Preheat oven to 180°C / 350°F.
Wash the potatoes and dry with paper towels.
With a sharp knife, cut a slit across the top of each potato, almost to the middle, and insert a bay leaf so that both ends stick out slightly.
Place in a baking dish and drizzle with olive oil.
Bake for 30 minutes, shake the dish to turn the potatoes, and continue baking another 30 minutes or until done.
Sprinkle with salt and serve.
