Arctic Char en Papillote

8-12 thin round lemon slices
4 Arctic char fillets (1 1/3 lb/750 g total)
½ tsp (2 mL) sea salt
2 tbsp (30 mL) melted unsalted butter
8 sprigs of fresh thyme
1. Cut four 15-inch (38 cm) squares of parchment paper; fold each piece in half to create a seam, then open. Place 2 to 3 lemon slices in a line near the fold of each piece; place 1 fish fillet, skin side down, on top. Sprinkle with salt. Drizzle with butter; top with thyme sprigs.
2. Fold paper over so edges meet; seal edges with narrow folds and twist end tips to secure. Transfer packets to rimmed baking tray; bake in preheated 425°F (220°C) oven for 10 to 12 minutes or until fish flakes easily when tested. Transfer fish to plate, discarding lemons and thyme; pour juices from packets over fish.
