1/3 cup (75 mL) fat-free mayonnaise
1 tbsp (15 mL) honey
3 tbsp (45 mL) fresh lemon juice
1 tbsp (15 mL) reduced-fat milk (2%)
Pinch salt
8 cups (2 L) baby lettuce (about 4 oz / 125 g)
4 large ripe red pears
1 celery rib, sliced
4 scallions, thinly sliced
3 tbsp (45 mL) coarsely chopped walnuts
2 oz (57 g) Gorgonzola cheese, crumbled (about 1/2 cup / 125 mL)

Directions

Whisk mayonnaise, honey, 1 tbsp (15 mL) lemon juice, milk, and salt in small bowl until smooth and blended. Wash and dry lettuce. Core pears and slice thinly. Toss pears with remaining lemon juice in large serving bowl. Add lettuce, celery, and scallions and toss until mixed.

Toast walnuts in nonstick skillet, stirring constantly, until slightly darker, about 3 minutes. Sprinkle walnuts and Gorgonzola over salad and drizzle with dressing. Health Hint: Walnuts are good for your heart because they are high in polyunsaturated fat, which doesn’t elevate cholesterol.

They are also a good source of omega-3 fatty acids, which may play an important role in the prevention and treatment of heart disease and hypertension.
