2-1/2 lb (1.2 kg) spinach, torn into pieces
2-1/2 lb (1.2 kg) cooked turkey breast, deli-style, cubed
10 carrots, grated
1-3/4 lb (875 g) small mushrooms, sliced
1 cup (250 mL) vegetable oil
1 cup (250 mL) vinegar
1-2/3 cups (425 mL) orange juice
5 tbsp (75 mL) orange rind, grated
3 tbsp (50 mL) liquid honey

Directions

In a large bowl combine spinach, turkey, carrots and mushrooms. Mix oil, vinegar, juice, rind and honey together. At serving time toss with salad.
