150 g (5 oz) mild pancetta, chopped coarsely
15 ml (1 tbsp) olive oil
1 onion, chopped finely
2 cans 540 ml (19 oz) white Lima beans, rinsed and drained
450 g (1 lb) Italian plum tomatoes, peeled, seeded and chopped
4 sprigs fresh basil
Salt and freshly ground pepper, to taste
- In a skillet, fry the pancetta in the olive oil until it is crispy. Add the onion and wilt over low heat until it is slightly browned. Add the beans, tomatoes, basil, salt and pepper.
- Cover and simmer gently for 15 minutes.
- Remove the basil and serve.
