Wheat and Mushroom Soup

250 ml / 1 cup pre-cooked wheat berries*
1 onion, chopped
2 stalks celery, chopped
30 ml / 2 tbsp olive oil
3 cloves garlic, minced
1 L / 4 cups chicken stock
1 can, 540 ml / 19 oz diced tomatoes
To taste salt and freshly ground pepper
1 container mushrooms, sliced
As required olive oil
In a saucepan, cook the wheat according to package directions.
In a soup pot, wilt the onion and celery in the oil. Add the garlic and cook another 2 minutes.
Add the stock and tomatoes and season to taste. Simmer 10 minutes.
Meanwhile, in a large skillet, sauté the mushrooms in a little oil.
Add the cooked, drained wheat and the mushrooms to the soup. Simmer 5 minutes and serve.
*Cooked barley or spelt may be used instead of wheat.
