12 medium shrimp, shelled
1 kg / 2 lb mussels, trimmed, cooked and shelled
8 mussel shells
2 cloves garlic, crushed
150 g / 5 oz squid, rings and tentacles, rinsed and dried
75 ml / 1/3 cup olive oil
150 ml / 2/3 cup dried black olives, pitted and quartered
3 oil-packed dried tomatoes, blotted and cut in thin strips
1 lemon, juiced and the zest cut in thin strips
60 ml / 4 tbsp dill, chopped
To taste salt and freshly ground pepper
In a skillet, sauté the shrimp and garlic in 30 ml / 2 tbsp of the oil until the shrimp begin to turn pink. Set aside on the counter with the cooked mussels.
In the same skillet, sauté the squid for two minutes. Add to the bowl with the other seafood.
Add the olives, dried tomatoes, lemon zest and juice, dill, remaining oil, salt and pepper, and toss to combine.
Divide among four plates and garnish with mussel shells and sprigs of dill.
