2 lb (1 kg) small red potatoes
1/2 lb (250g) sliced bacon, cut into ¼-inch (5 mm) pieces
1 medium onion, diced
1/4 cup (50 mL white wine vinegar
1/4 cup (50 mL vegetable oil
1/4 cup (50 mL hot chicken stock
1 tbsp (15 mL Dijon mustard
1/2 cup (125 mL) chopped fresh dill or parsley
Salt and pepper
Boil potatoes, and cut into 1-inch (2.5 cm) dice. Meanwhile, sauté bacon until almost cooked. Remove bacon, add onions to bacon fat, and cook until translucent; drain.
Combine vinegar, oil, stock, mustard, and dill or parsley. Gently toss dressing, bacon, and onion with potatoes. Season to taste.
Makes 6 servings.
