1 cup (250 mL) cooked turkey meat
4 cups (1 L) turkey or chicken stock (OR 2 cups/500 mL canned broth and 2 cups/500 mL water)
1 small onion, chopped
2 cups (500 mL) broccoli, cut in bite size pieces
1 can (14 oz/398 mL) cream style corn
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) pepper
In a large soup pot, bring stock to a boil. Add onion. Cook for 2 minutes, then add broccoli. Cook 3-4 minutes longer, until broccoli is tender-crisp. Reduce heat to medium low. Add turkey, corn, salt, and pepper. Simmer until heated through, then serve immediately.
Makes 2 servings.
