250 ml / 1 cup mint leaves, torn
15 ml / 1 tbsp white wine vinegar
3 ml / 1/2 tsp sugar
3 ml / 1/2 tsp salt
30 ml / 2 tbsp olive oil
3 large tomatoes, in wedges
1 small red onion, sliced
To taste freshly ground pepper
In a bowl, combine the mint, vinegar, sugar and salt. Stir until the sugar and salt are dissolved.
Add the oil, tomatoes and onions, toss well, and let sit 20 minutes on the counter.
Serve with freshly ground pepper.
