Ingredients

1 l/4 cups (240 g) arugula
250 ml (1 cup) strawberries, sliced
125 ml (1/2 cup) walnuts, chopped
30 ml (2 tbsp) green onion, thinly sliced
45 ml (3 tbsp) freshly squeezed lemon juice
30 ml (2 tbsp) honey
50 ml (1/4 cup) olive oil
Salt and freshly ground pepper, to taste

Directions

  1. In a large bowl toss the arugula, strawberries, walnuts and green onions.
  2. In another bowl, combine the lemon juice, honey and oil.
  3. Pour the vinaigrette over the salad and season with salt and pepper.
  4. Toss just before serving.
