1 small red onion, sliced thinly
3 oranges, peeled, sliced thinly
1 large fennel bulb, sliced thinly
To taste fennel leaves
125 ml / 1/2 cup kalamata olives
30 ml / 2 tbsp freshly squeezed orange juice
30 ml / 2 tbsp freshly squeezed lemon juice
15 ml / 1 tbsp white wine vinegar
5 ml / 1 tsp honey
125 ml / 1/2 cup olive oil
To taste salt and freshly ground pepper
450 g / 1 lb cooked salmon
As required olive oil
Soak the onion in cold water for 10 minutes.
Drain and transfer to a bowl with the oranges, fennel and olives.
In another bowl, combine the juices, vinegar, honey and oil. Pour 3/4 of the dressing over the salad, season to taste and toss.
Divide the salad among four plates. Place a serving of salmon on each plate and drizzle with the remaining dressing.
