1 head chicory, tender heart only
1 bunch arugula, trimmed
2 endives, in thin strips
180 ml / 3/4 cup / 80 g grated goat cheese
1 red pear, unpeeled, cored and sliced thinly
15 ml / 1 tbsp red wine vinegar
5 ml / 2 tsp strong mustard
To taste salt and freshly ground pepper
60 ml / 4 tbsp olive oil
Separate the chicory leaves, wash well and spin dry. Place in a large salad bowl with the arugula and endives.
In a small bowl, whisk together the vinegar, mustard, salt, pepper and oil.
Pour over the salad and toss.
Top with cheese and garnish with pear slices.
