Ingredients

30 ml / 2 tbsp    dill, snipped
45 ml / 3 tbsp    freshly squeezed lemon juice
60 ml / 4 tbsp    olive oil
1    red pepper, trimmed and diced
1    yellow pepper, trimmed and diced
750 ml / 3 cups    cooked rice
To taste    salt and freshly ground pepper
325 ml / 1 1/3 cups / 200g    diced ham
250 ml / 1 cup / 100 g    diced Cheddar   
6    eggs, medium or hard boiled
1 sprig    dill

Directions

In a bowl, combine the dill, lemon juice and oil. Add the peppers, rice and seasonings and combine. Chill for two hours.

Add the ham and cheese, garnish with egg wedges and top with a sprig of dill.

Serve immediately.
