450 g / 1 lb tiny white new potatoes, halved, cooked
750 ml / 3 cups mesclun (gourmet greens)
125 ml / 1/2 cup red onion, sliced thinly
2 tomatoes, in wedges
8 anchovy fillets, blotted and sliced thinly
30 ml / 2 tbsp olive oil
15 ml / 1 tbsp balsamic vinegar
To taste salt and freshly ground pepper
1 container, 500 g bocconcini, drained, halved
In a large bowl, combine the potatoes, greens, onion, tomatoes and anchovies.
In another bowl, whisk together the oil and vinegar.
Pour the dressing over the salad, season to taste and toss gently.
Serve immediately, garnished with bocconcini halves.
