Ingredients

1 medium onion, chopped
60 ml (4 tbsp) olive oil
4 cloves garlic, minced
500 ml (2 cups) diced potatoes
125 ml (1/2 cup) white wine
375 ml (1 1/2 cups) water
Salt and freshly ground pepper, to taste
2 cans, 142 g each  baby clams, with their liquid
175 ml (2/3 cup) canned, diced Italian plum tomatoes, with their liquid
170 g (6 oz) baby spinach
1 lemon, quartered

Directions

  1. In a soup pot, wilt the onion in the oil. Add the garlic and potatoes and cook for 5 minutes.
  2. Add the wine and water and bring to a boil. Season to taste with salt and pepper, reduce the heat, cover and simmer for 10 minutes.
  3. Add the tomatoes and spinach and return to the boil. Add the clams.
  4. Remove from heat and serve with lemon wedges.
