1½ lbs (750 g) hanger steak
2 tbsp (25 mL) hoisin sauce
1 tbsp (15 mL) orange juice
1 tbsp (15 mL) soy sauce
1 tsp (5 mL) dark sesame oil
2 cloves garlic, minced
Dressing:
1 tsp (5 mL) minced fresh gingerroot
1 clove garlic, minced
2 tbsp (25 mL) orange juice
2 tbsp (25 mL) soy sauce
1 tbsp (15 mL) honey
2 tbsp (25 mL) seasoned rice vinegar
1 tsp (5 mL) dark sesame oil
Salad:
1 lb (500 g) carrots, sliced on the diagonal
1 lb (500 g) asparagus, trimmed
10 cups (2½ L) mixed greens
3 tbsp (45 mL) each of chopped fresh cilantro, basil and mint (or use 1 herb alone)

Directions

  1. Place steak in a baking dish or heavy plastic bag. Combine hoisin sauce, orange juice, soy sauce, sesame oil and garlic; pour over steak. Rub in well, cover, then refrigerate for one hour up to overnight.
  2. Grill steak over a hot barbecue, in a grill pan or under the broiler for about 5 to 7 minutes per side, depending on steak thickness, but until a thermometer registers 130°F (55°C). Set aside for 5 to 10 minutes. Cut into thirds across the length and slice thinly against the grain.
  3. Meanwhile, prepare dressing by whisking together gingerroot, garlic, orange juice, soy sauce, honey, rice vinegar and sesame oil.
  4. For salad, bring a deep skilletful of water to a boil. Add carrots and cook for 2 to 3 minutes, until tender-crisp. Remove carrots and place in ice water to stop the cooking. Pat dry. Place asparagus in the boiling water, cook for 2 to 3 minutes, transfer to ice water and, when cool, pat dry.
  5. Toss mixed greens with herbs and place on a large platter. Top with vegetables, then with sliced steak. Drizzle with dressing. Sprinkle with toasted sesame seeds.
