125 ml / 1/2 cup spelt
750 ml / 3 cups water
500 ml / 2 cups thick, plain yogurt
15 ml / 1 tbsp dried mint
50 ml / 1/4 cup cold water
5 ice cubes
To taste salt and freshly ground pepper
To taste fresh mint leaves
In a soup pot, bring the spelt and water to a boil. Reduce the heat, cover and cook one hour.
Drain and rinse the barley under plenty of cold running water.
Transfer to a large bowl and set aside.
In another bowl, whisk together the yogurt, dried mint and cold water. Add the ice cubes and whisk a few more seconds.
Season to taste, pour over the spelt, stir delicately to combine and allow to sit ten minutes.
Garnish with fresh mint and serve.
