1/2 cup (125 mL) unsalted butter
4 tbsp (60 mL) brown sugar
1 tsp (5 mL) cinnamon
1 cup (250 mL) all-purpose flour
1/4 cup (125 mL) quick-cooking rolled oats
1/2 tsp (2 mL) baking soda
1 cup (250 mL) raisins
1/4 cup (50 mL) dried apricots
1/4 cup (50 mL) dates
1/4 cup (50 mL) chopped nuts
1 tsp (2 mL) vanilla extract
Directions
Here’s a great tasting cookie you can feel good about eating!
In a large bowl, cream together butter, sugar and cinnamon. Add flour, oats and soda; mix well. Mix in raisins, apricots, dates, nuts and vanilla. Drop by teaspoonfuls onto greased cookie sheets. Bake in a preheated 375°F (190°C) oven about 8 to 10 minutes.
Makes 4 to 6 servings
