Chilled Melon and Mango Soup

2 cups (500 mL) cubed cantaloupe
1 cup (250 mL) diced mango
3/4 cup (175 mL) orange juice
1/2 cup (125 mL) lower-fat plain yogurt
2 tbsp (25 mL) lime juice
2 tbsp (25 mL) liquid honey
Chopped fresh mint (optional)
In a food processor or blender, combine cantaloupe and mango; purée until smooth. Add orange juice, yogurt, lime juice, and honey. Blend until combined. Chill before serving. Serve sprinkled with mint, if desired.
Tip: This soup can be refrigerated for up to 3 days but does not freeze well.
Nutrition note: Mangoes are rich in flavour and high in beta-carotene. They are ready to eat when their skins have turned yellow-orange or red in colour and are soft to the touch.
