1 cantaloupe, peeled, seeded and diced
250 ml / 1 cup peach nectar
30 ml / 2 tbsp freshly squeezed lime juice
45 ml / 3 tbsp basil leaves, shredded
3 slices prosciutto, in thin strips
To taste small basil leaves
In a blender, purée the cantaloupe, peach nectar and lime juice.
Refrigerate two hours.
Add the shredded basil and stir well.
Serve in chilled bowls, garnished with prosciutto and basil leaves.
