Instructions
  1. Assemble the kebabs, alternating vegetables.
  2. Preheat the barbecue.
  3. Place the kebabs on the grill and cook on all sides. Remove and keep warm.
  4. In a small saucepan, bring the lemon juice and saffron to a boil. Remove from heat and add the butter a little at a time, whisking constantly. If necessary, return to the heat to melt the butter, but do not stop whisking.
  5. Pour the sauce over the kebabs and serve.
