1/2 cup (125 mL) butter or margarine, softened
1/2 cup (125 mL) crunchy peanut butter
2/3 cup (150 mL) granulated sugar
1-1/2 cups (375 mL) all-purpose flour
1/2 tsp (2 mL) baking powder
1/3 cup (75 mL) raisins (optional)
Preheat oven to 350°F (180°C). In large bowl, cream butter, peanut butter, and sugar. Beat in egg. In another bowl, stir together flour and baking powder. Stir into peanut butter mixture. Stir in raisins. Form dough into 1-1/4 inch (3 cm) balls.
Place on ungreased baking sheets, spacing well apart. Press each ball with the back of a fork to make a pattern. If desired, decorate the top with chopped peanuts or dried fruit.
Bake, one baking sheet at a time, in the centre of the oven for 12 to 15 minutes or until golden around edges. Cool on baking sheet for a few minutes before transferring to wire rack.
Makes about 30 cookies.
