250 mL (1 cup) butter or margarine 125 mL (1/2 cup) sugar
2 egg yolks
1 mL (1/4 tsp) salt
500 mL (2 cups) Five Roses All Purpose Flour
250 mL (1 cup) finely chopped nuts
2 egg whites, lightly beaten
Jelly or jam to garnish
Preheat oven to 160ºC (325ºF). Cream butter; gradually add sugar, beating well between additions. Add egg yolks; mix well. Blend in dry ingredients. Shape dough into balls 5 cm (2) in diameter.
Brush with egg whites and then roll in chopped nuts. Place on greased baking sheets, spacing well; make an indentation in centre of cookies with finger. Bake in a moderate oven. After 15 minutes in the oven, press indentation again with finger and return to oven to complete baking.
Total cooking time: 20 to 25 minutes.Remove from sheets and cool on rack.
To serve, fill centres with jelly or jam. Yield: 4 dozen – 3.5 cm (about 1-1/2) cookies.
