1 cup (250 mL) all-purpose flour
1/3 cup (75 mL) finely ground almonds
1/2 cup (125 mL) granulated sugar
1/8 tsp (0.5 mL) salt
1/2 cup (125 mL) butter, cut up
1 large egg, lightly beaten
Stir together the flour, almonds, sugar, and salt in a medium bowl. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Add enough beaten egg to form a smooth dough. Press the dough into a disk, wrap in plastic wrap and refrigerate for 30 minutes.
Preheat oven to 350ºF (180ºC). Butter a cookie sheet. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm). Trim the edges into a square.
Cut into 4-inch (10 cm) logs and form into rings. Use a spatula to transfer the cookies to the prepared cookie sheet, placing them 1 inch (2.5 cm) apart. Bake for 10-12 minutes, or until just golden. Transfer to racks and let cool completely.
Makes 12 – 16 cookies. Keeps 2 weeks.
