375 mL (1-1/2 cups) all-purpose flour
125 mL (1/2 cup) whole-wheat flour
125 mL (1/2 cup) shredded low-fat Cheddar cheese plus 15 mL (1 tbsp) for sprinkling
15 mL (1 tbsp) each chopped fresh chives and parsley
10 mL (2 tsp) baking powder
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) baking soda
250 mL (1 cup) plain nonfat yogurt or 175 mL (3/4 cup) buttermilk
Preheat the oven to 230?C (450?F). In a large bowl, mix together the all-purpose flour, whole-wheat flour, 125 mL (1/2 cup) cheese, herbs, baking powder, salt, and baking soda.
Add the yogurt to the bowl and mix with a fork until the mixture holds together and forms a soft dough that leaves the sides of the bowl.
On a lightly floured work surface, knead the dough 4 to 6 times. Roll out the dough to 1 cm (1/2 in) thickness. Flour a 5 cm (2 in) round cutter and cut out biscuits from the dough, using a firm downward action, without twisting the cutter.
Sprinkle the biscuits with remaining cheese and bake for 10 to 12 minutes or until golden.
Makes 20 biscuits.
