500 g (1 lb) green beans, trimmed
75 ml (⅓ cup) extra-virgin olive oil
30 ml (2 tbsp) balsamic vinegar
30 ml (2 tbsp) fresh mint, snipped
100 g (250 ml / 1 cup) radishes, washed and sliced thinly
250 g (½ lb) Havarti cheese, diced
Salt and freshly ground pepper, to taste
- In saucepan, blanch the beans for 2 minutes. Drain, rinse under cold water and set aside.
- In a bowl, combine the oil, vinegar and mint. Add the beans, radishes and cheese. Toss well, seasoning with salt and pepper.
- Serve on chilled plates.
