375 mL (1-1/2 cups) all-purpose flour
125 mL (1/2 cup) whole-wheat flour
30 mL (2 tbsp) wheat germ
10 mL (2 tsp) baking powder
2 mL (1/2 tsp) salt
1 mL (1/4 tsp) baking soda
250 mL (1 cup) plain nonfat yogurt or 175 mL (3/4 cup) buttermilk
1% low-fat milk for glazing
Preheat oven to 230?C (450?F). In a large bowl, mix together the all-purpose flour, whole-wheat flour, wheat germ, baking powder, salt, and baking soda.
Add the yogurt to the bowl and mix with a fork until the mixture holds together and forms a soft dough that leaves the sides of the bowl.
On a lightly floured work surface, knead the dough 4 to 6 times. Roll out the dough to 1 cm (1/2 in) thickness. Flour a 5 cm (2 in) round cutter and cut out biscuits from the dough, using a firm downward action, without twisting the cutter.
Place the biscuits 2.5 cm (1 in) apart on a lightly greased baking sheet. Press the dough trimmings together without kneading, then roll and cut out biscuits until all the dough is used. Brush the tops of the biscuits with low-fat milk and bake for 10 to 12 minutes or until golden.
Makes 16 biscuits.
