1 cup (250 mL) light cream
1/3 cup (75 mL) pure maple syrup
2/3 cup (150 mL) firmly packed dark brown sugar
1 tbsp (15 mL) butter
1 cup (250 mL) corn flakes
1/2 cup (125 mL) flaked almonds
1/4 cup (60 mL) shredded coconut
3/4 cup (175 mL) finely chopped dried unsweetened banana chips
1/2 cup (125 mL) coarsely chopped dried apricots
Butter an 11 x 7-inch (28 x 18 cm) baking pan. Cook the cream, maple syrup, brown sugar, and butter in a medium saucepan over low heat, stirring often, until the sugar has dissolved completely.
Bring to a boil and boil for 10 minutes. Stir in the corn flakes, almonds, coconut, banana chips, and apricots. Firmly press the mixture into the prepared pan to form an even layer. Refrigerate for at least 2 hours. Cut into squares.
Makes 22 squares. Keeps 2 days in the refrigerator.
