2-2/3 cups (650 mL) all-purpose flour
1/3 cup (75 mL) unsweetened cocoa powder
1 tsp (5 mL) baking powder
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
1 cup ( 250 mL) butter, softened
3/4 cup (175 mL) granulated sugar
1/2 cup (125 mL) firmly packed light brown sugar
1 tsp (5 mL) vanilla sugar (see Bavarian Apple Cones recipe)
2 large eggs
1/2 cup (125 mL) white chocolate chips
2-3 tbsp (30 – 45 mL) milk
Pecan-cream cheese filling:
1-1/2 packages (12 oz/375 g total) cream cheese, softened
1/2 cup (125 mL) confectioners’ sugar
1 tsp (5 mL) vanilla extract
2/3 cup (150 mL) finely chopped pecans
3 oz (85 g) white chocolate, coarsely chopped

Directions

Sift the flour, cocoa, baking poder, baking soda, and salt into a medium bowl. Beat the butter and granulated, brown, and vanilla sugars in a large bowl with an electric mixer at high speed until creamy. Add the eggs, beating until just blended. Mix in the dry ingredients, chocolate chips, and enough milk to form a soft but non-sticky dough.

Form the dough into two 10-inch (25 cm) logs, wrap in plastic wrap, and refrigerate for at least 30 minutes. Preheat the oven to 375ºF (190ºC). Set out four cookie sheets. Slice the dough 1/4 inch (5 mm) thick and place 1 inch (2.5 cm) apart on the cookie sheets. Bake, one sheet at a time, for 8-10 minutes, or until the edges are firm and the bottoms are lightly browned.

Cool on the sheets until the cookies firm slightly. Transfer to racks and let cool completely.

Pecan-cream cheese filling:

With mixer at medium speed, beat the cream cheese, confectioners’ sugar, and vanilla until well blended. Stir in the pecans. Stick the cookies together in pairs with the filling. Melt the chocolate in a double boiler over barely simmering water. Drizzle the chocolate over the cookies.

Makes 20 cookies. Keeps 4 days in the refrigerator.
