3/4 cup (175 mL) butter, softened
1 cup (250 mL) brown sugar, packed
1/3 cup (75 mL) sugar
2 tbsp (30 mL) water
2 tsp (10 mL) vanilla
3/4 cup (175 mL) all-purpose flour
3/4 tsp (3 mL) baking soda
1 tsp (5 mL) cinnamon
3 cups (750 mL) oats
1 cup (250 mL) dried cranberries
1/2 cup (125 mL) chopped pecans (optional)
Cream butter, sugars, egg, water, and vanilla together on medium speed of electric mixer until light and creamy. Combine flour, baking soda, and cinnamon. Add to creamed mixture, beating on low speed until blended. Stir in oats, cranberries, and nuts.
Drop dough by heaping spoonfuls onto greased baking sheets. Press flat for crisp cookies; leave mounded for chewy cookies. Bake at 350ºF (180ºC) for 12-15 minutes, or until edges are golden brown. Don’t overbake.
Makes about 4 dozen cookies.
