1/4 lb (50 mL) unsalted butter
1/3 cup (75 mL) cocoa
Salt
1 cup (250 mL) sugar
2 larges eggs
1/3 cup (75 mL) self-raising flour
1 tsp (5 mL) natural vanilla extract
4 tbsp (60 mL) walnut pieces

Directions

Preheat the oven to 350°F (180°C), then line a 12 x 8 x 1 inch (30 x 20 x 2.5 cm) baking tin with baking paper. Place the butter in a saucepan, allow it to melt gently, then take it off the heat.

Sift the cocoa into the melted butter, add a pinch of salt and the sugar and mix together. Break the eggs into the cocoa mixture and whisk until smoothly blended. Sift the flour into the pan, fold it in, add the vanilla extract and the walnuts, and stir gently.

Pour the brownie mixture into the baking tin. Bake for 18 minutes or until just set, but still soft (it will firm up as it cools). While it is still warm, turn the cooked mixture out onto a large board and cut into squares.
