2 large eggs
3/4 cup (175 mL) honey
1/4 cup (50 mL) water
1/4 cup (50 mL) vegetable oil
2 tsp (10 mL) vanilla extract
1-1/2 cups (375 mL) all-purpose flour
1-1/2 tsp (7 mL) baking powder
3 tbsp (45 mL) non-fat dry milk
1/4 tsp (1 mL) salt
For the icing:
3/4 cup (75 mL) chopped pecans or other nuts
1/4 cup (50 mL) confectioners’ sugar
1 tsp (5 mL) cinnamon

Directions

Preheat the oven to 375°F (190ºC). Butter and flour a 9-inch (23 cm) square baking pan. In the large bowl of an electric mixer fitted with a whisk attachment, beat eggs and honey at high speed for 5 minutes or until light in colour.

Add water, oil, vanilla, flour, baking powder, dry milk, and salt and beat mixture until just smooth. Pour batter into pan. If you are using the topping, mix together the ingredients and sprinkle over top of batter. Bake for 25 minutes or until a tester comes out clean. Let cool in the pan on a rack.
