250 ml / 1 cup crushed lady fingers (about 15 cookies)
50 ml / 1/4 cup sugar
50 ml / 1/4 cup melted butter
1 lb goat cheese, at room temperature
250 ml / 1 cup sugar
125 ml / 1/2 cup milk
50 ml / 1/4 cup all-purpose flour
50 ml / 1/4 cup apricot jam
30 ml / 2 tbsp water
8 large strawberries, washed, stems on
Preheat oven to 170°C / 325°F.
In a bowl, combine the ingredients for the crust.
Press into the bottom of an 18 cm / 7” springform pan.
Bake 12 minutes and set aside at room temperature.
In a large bowl, beat the cheese and the sugar with an electric mixer for two minutes. Add the milk and eggs and beat another two minutes until smooth.
Add the flour and beat for one more minute.
Pour into the pan, smooth the surface and bake about 1 hour in the middle of the oven.
Remove from oven and cool at room temperature. Refrigerate overnight.
In a small saucepan, combine the jam and the water and bring to a boil. Purée the mixture with a hand-held blender.
Dip the strawberries into the slightly cooled jelly and arrange on the cake.
