375 ml Ricotta cheese 1 1/2 cups
180 ml sugar 3/4 cup
15 ml vanilla 1 tbsp.
60 g 2 squares dark chocolate, coarsely grated with a knife 2 oz.
45 ml pistachio nuts, shelled and toasted 3 tbsp.
375 ml candied fruit 1 1/2 cups
1 x 23 cm Genoise cake 1 x 9-in.
75 ml Amaretto liqueur 1/3 cup
2 rolls almond paste (227 g / 8 oz. each)
Optional fresh fruits for garnish
In a bowl, beat the cheese until creamy. Blend in sugar, vanilla, chocolate, pistachios and one cup of the candied fruit. Mix well and set aside.
Slice the Genoise into three equal layers.
Place one slice in the bottom of a 23-cm (9-in.) springform pan. Sprinkle with Amaretto. Spread half the cheese mixture on top. Repeat with the second slice of cake, using the remaining Amaretto and cheese mixture. Place third slice of cake on top. Cover and refrigerate one hour.
Remove the sides of the pan. Roll the almond paste into a circle large enough to completely cover the cake.
Decorate with fresh fruits and the remaining candied fruit.
