2-2/3 cups (650 mL) all-purpose flour
1 tbsp (15 mL) baking powder
1-1/2 tsp (7 mL) baking soda
1/2 tsp (2 mL) salt
1 cup (250 mL) butter, softened
1-1/4 cup (300 mL) granulated sugar
3 eggs
1-1/2 cup (375 mL) bananas, mashed
1 cup (250 mL) buttermilk
3/4 cup (175 mL) mini baking chips
For the frosting:
1/2 cup (125 mL) butter, softened
1/3 cup (75 mL) bananas, mashed
3 cups (750 mL) icing sugar, sifted

Directions

For the cake: Combine flour, baking powder, baking soda, and salt. Cream butter and sugar in large mixer bowl until light and fluffy. Add eggs, one at a time, beating thoroughly after each.

Add banana. Mix well. Add flour mixture to creamed mixture alternately with buttermilk, mixing lightly after each. Stir in baking chips. Spread batter evenly in greased 13” x 9” (33 cm x 23 cm) cake pan. Bake at 350°F (180°C) for 40-45 minutes, or until toothpick inserted in centre comes out clean. Cool in pan on wire rack.

For the Frosting: Beat all ingredients together until smooth. Spread on cake.

Makes about 15 servings.
