Lemon Dill Drumsticks and Potatoes
Place 12 chicken drumsticks in slow cooker. Add thick slices of zucchini, whole baby potatoes, sliced green onion, lemon zest and juice, 1 cup (250 mL) water, a handful of finely chopped fresh dill, salt and pepper to taste. Stir. Cook on high for 4 hours. Serve with a ladle of broth.
Pour plain tomato sauce into slow cooker. Add pork-shoulder chops, thinly sliced red and green peppers, sliced onion, minced garlic, finely chopped parsley, dried thyme, salt and pepper to taste. Stir. Cook on high for 4 hours. Serve with mashed potatoes.
Mexican Saucy Beef Short Ribs
Pour a 2-cup (500 mL) jar of salsa into slow cooker. Add chipotle sauce, cumin powder, coriander powder, chili powder, oregano, salt and pepper to taste. Toss in minced garlic. Cut 3 lb (1.5 kg) beef short ribs into chunks and stir into sauce. Cook on high for 6 hours. Serve with rice and chopped cilantro.
Lentil, Kale and Butternut Squash Curry
Soak 2 cups (500 mL) lentils for 2 hours. Pour one can each coconut milk and crushed tomatoes into slow cooker. Stir in garam masala, curry powder, salt, minced garlic, ginger and chopped onion to taste. Add chunks of squash, chopped kale and pre-soaked lentils. Cook on high for 6 hours. Serve with nan and chopped cilantro.
