Ingredients

4 cups (1 L) cubed, cooked turkey breast
1-1/2 cups (375 mL) diced unpeeled apples
1-1/2 cups (375 mL) diced celery
1/4 cup (50 mL) chopped walnuts
3/4 cup (175 mL) light mayonnaise or salad dressing
1 tbsp (15 mL) lemon juice
Pinch salt
Leaf lettuce

Directions

In large bowl combine turkey, apple, celery, and walnuts. In a small bowl, stir together mayonnaise, lemon juice, and salt. Pour dressing over turkey mixture and toss well to coat evenly. Cover and refrigerate at least one hour to blend flavours. Serve on chilled lettuce leaves.
