750 g (1 1/2 lbs) boneless, skinless turkey or chicken breast
50 mL (1/4 cup) reduced-sodium soy sauce
30 mL (2 tbsp) olive or canola oil
2 cloves garlic, finely chopped
3 mL (3/4 tsp) ground ginger
1 mL (1/4 tsp) crushed red pepper
2 sweet red peppers, cubed
2 sweet green peppers, cubed
3 zucchini, cut into thick slices
For the yogurt sauce:
300 mL (1 1/4 cups) low-fat plain yogurt
1 mL (1/4 tsp) ground cumin
50 mL (1/4 cup) chopped mint
Remove fat from the turkey; cut meat into 2.5 cm (1 in) cubes.
In a bowl, combine soy sauce, oil, garlic, ginger, and crushed red pepper. Add turkey and mix. Cover and marinate for 1 hour.
Prepare the grill or broiler. On 6 long metal skewers, thread the turkey, peppers and zucchini. Brush with marinade.
Grill kabobs 5 to 6 minutes. Turn once and grill 5 to 6 minutes or until turkey is cooked through. In a bowl, mix the yogurt, cumin and mint. Serve.
