12 mL (2 1/2 tsp) sugar
5 mL (1 tsp) salt
6 mL (1 1/4 tsp) dried oregano
2 mL (1/2 tsp) pepper
0.5 mL (1/8 tsp) allspice
750 g (1 1/2 lbs) large red onions, cut into 1 cm (1/2 in) cubes
20 mL (4 tsp) olive oil
1 tomato, diced
30 mL (2 tbsp) red wine vinegar
4 tuna steaks (170 g/6 oz each)
Preheat the oven to 180°C (350°F). In a medium bowl, combine the sugar, 2 mL (1/2 tsp) of the salt, the oregano, pepper, and allspice. Add the onions and 10 mL (2 tsp) of the oil, tossing well to coat.
Transfer to a 22.5 x 32.5 cm (9 x 13 in) baking dish, cover with foil, and bake for 30 minutes, stirring occasionally. Uncover and bake for 10 minutes. Transfer to a bowl, stir in the tomato and vinegar, and cool to room temperature.
On a grill pan or in a large nonstick skillet, heat the remaining 10 mL (2 tsp) oil over moderately high heat. Sprinkle the remaining 2 mL (1/2 tsp) salt over the tuna and cook, turning the fish over midway, for 5 minutes or until medium-rare. Serve with the relish spooned on top.
