24 slices (1 cm/1/2-inch thick) Italian bread (340 g/12 oz total)
3 cloves garlic, peeled and halved
30 mL (2 tbsp) olive oil
681 g (1 1/2 lbs) plum tomatoes, coarsely chopped
75 mL (1/3 cup) chopped fresh basil
15 mL (1 tbsp) no-salt-added tomato paste
3 mL (3/4 tsp) salt
2 mL (1/2 tsp) grated orange zest
1 mL (1/4 tsp) pepper
Preheat the oven to 200°C (400°F). Rub the bread with one of the halved garlic cloves. Brush the bread with 15 mL (1 tbsp) of the oil and bake for 7 minutes or until golden brown and crisp. In a small pan of boiling water, cook the 2 remaining garlic cloves for 3 minutes to blanch. Finely chop.
In a medium bowl, combine the chopped garlic, tomatoes, basil, tomato paste, salt, orange zest, pepper, and remaining 15 mL (1 tbsp) oil. Spoon on top of the toasted garlic bread.
