For the salsa:
425 mL (1-3/4 cups) peeled, seeded, and finely chopped tomatoes
4 sun-dried tomatoes (not oil-packed), soaked in warm water, drained, and finely chopped
2 shallots, finely chopped
1 clove garlic, crushed
15 mL (1 tbsp) olive oil
15-30 mL (1-2 tbsp) chopped fresh basil
Sea salt
Freshly ground black pepper

These Thai-spiced shrimp served with a delicious tomato salsa will be a popular choice for anyone who enjoys seafood. Shrimp are an important source of selenium, which helps to maintain a healthy heart.
To make the salsa, put the fresh and dried tomatoes, shallots, garlic, olive oil, basil, and seasoning in a bowl and mix well. Cover and leave to stand at room temperature for about 1 hour. Preheat the broiler to high.
Put 30 mL (2 tbsp) oil and Thai 7-spice powder in a bowl. Add the shrimp and toss to coat them all over. Thread the shrimp onto four skewers. Place the kebabs on a broiler rack in a broiler pan. Broil for 2 to 3 minutes on each side, turning occasionally.
The shrimp will turn pink once they are cooked. Serve the kebabs hot with the tomato salsa spooned alongside and a crisp green side salad.
Variations:
• Use fresh shelled scallops instead of tiger shrimp.
• Use 4 green onions instead of the shallots.
• Use chopped fresh cilantro or flatleaf parsley instead of basil.
