500 mL (2 cups) fresh or frozen baby lima beans
500 mL (2 cups) fresh or frozen corn kernels
250 mL (1 cup) half-and-half
30 mL (2 tbsp) butter, margarine, olive oil, or bacon drippings
3 mL (3/4 tsp) salt
45 mL (3 tbsp) chopped fresh chives
OR 10 mL (2 tsp) freeze-dried chives
1 mL (1/4 tsp) black pepper
- In a large saucepan over high heat, bring lima beans, corn, half-and-half, butter, and salt to a boil. Reduce the heat to moderate, cover, and cook until tender — 10 to 12 minutes.
- Remove from the heat and stir in chives and pepper.
