Ingredients

1 lb (500 g) jumbo shrimp (about 12)
2 cups (500 mL) soft bread crumbs
1-1/2 scallions, thinly sliced
1/4 cup (50 mL) minced parsley
2 tbsp (30 mL) grated Parmesan cheese
1-1/2 tbsp (25 mL) lemon juice
2 tbsp (30 mL) olive oil
1/4 tsp (1 mL) dried rosemary, crumbled

Directions

Preheat oven to 400°F (200°C). Peel, devein, and butterfly shrimp. In a medium-size bowl, combine breadcrumbs, scallions, parsley, Parmesan, lemon juice, oil, and rosemary. Place shrimp, cut sides up, on a greased baking sheet. Mound stuffing on shrimp and bake, uncovered, until stuffing is browned and shrimp are just done — 6 to 10 minutes.

Makes 4 servings.
