4 pita rounds
1 cup (250 mL) sliced green and red peppers
1/2 cup (125 mL) red onion, sliced
1 cup (250 mL) carrot, sliced
1/2 cup (125 mL) Swiss cheese, sliced
1/2 cup (125 mL) garlic chives
This is a fancy type of pizza that can be served with a salad or soup. I use this recipe as an appetizer for small dinner parties.
Slice up the vegetables. Place the vegetables on the pita in a circle, evenly spaced. Add the Swiss cheese and broil (or place on grill on low with the lid on for 4-5 minutes to melt cheese). Check occasionally, making sure the vegetables are not overcooked.
Use your imagination and try different vegetable combinations. For special flair add 12 large cooked shrimp.
