Strawberry Milk Sherbet

500 mL (1 pint) strawberries, rinsed and hulled
250 mL (1 cup) milk
250 mL (1 cup) sugar
In a food processor, purée strawberries until smooth. In a medium-size saucepan over high heat, bring milk and sugar to a rolling boil. Remove from the heat and cool until just warm. In a medium-size bowl, whisk together milk mixture and strawberries. Transfer to an ice cream maker and freeze according to manufacturer’s directions.
Note: If you want to make sherbet in the freezer without an ice cream maker, pour the mixture into 2 L (8 inch) square pan and place in the freezer. When the mixture begins to freeze, turn it out into a bowl and beat it with an electric mixer until fluffy. Return the mixture to the pan and freeze until firm. For finer textured sherbet, repeat the beating and freezing 2 or 3 times.
Makes 4 servings.
